Apple and Cheddar Frittata

Apple and Cheddar Frittata (Adapted from Everyday Food)

6 large eggs plus
6 large egg whites
4 ounces shredded sharp white cheddar cheese
salt and fresh ground pepper to taste
1 tablespoon butter
2 Gala apples, peeled, cored, and sliced lengthwise into 1/8-inch-thick pieces

Preheat oven to 450 - place the rack in the top third of the oven.

In a medium bowl, whisk together eggs, egg whites and half of the cheese - season with salt and pepper.

In a medium oven-safe skillet, melt butter over medium. Pour in the egg mixture and let sit for 1 minute. Gently, but quickly, arrange the sliced apples on top in a circular pattern, starting from the outside edge. Scatter the top with the remaining cheese.

Place the skillet in the oven and bake until frittata is set in the center and cheese is browned, about 20 minutes. Remove and carefully lift out the frittata onto a cutting board and let rest 5 minutes before cutting.

Makes about 4 servings.
