Apple Cinnamon Pizza

Apple Cinnamon Pizza (Adapted from Canadian Living)

cornmeal, for dusting
12 ounces prepared whole-wheat pizza dough (I used our favorite recipe)
1/3 cup golden raisins
3 cups finely chopped peeled apples
3 tablespoons granulated sugar
2 tablespoons butter, melted
1 tablespoon fresh lemon juice
1 1/2 teaspoons cinnamon

Preheat oven to 450 degrees with a pizza stone placed on the lowest rack.

Sprinkle enough cornmeal to lightly cover a pizza peel. Stretch and roll out dough to a rough 12" circle and transfer to the cornmeal-dusted peel. Slide the crust onto the stone and cook until the bottom begins to crisp up, about 3 to 5 minutes. Carefully remove from the oven and place the crust, uncooked side down, onto a cutting board. Sprinkle crust with raisins.

In a medium bowl, toss together apples, sugar, butter, lemon juice and cinnamon - scatter mixture over the crust. Slide pizza back onto the stone and bake until the crust is golden and the apples are tender, about 15 minutes. Remove from the oven and let cool slightly before serving.

Makes about 6 to 8 servings.

  1. Thanks for the advice on getting a crispy crust. I was looking to buy a pizza peel at Williams Sonoma - now I will.
