Asiago-Parsley Oven Fries

1 large russet potato
2 teaspoons olive oil
1/8 teaspoon pepper
1 ounce fresh grated Asiago cheese
1 tablespoon chopped fresh parsley
1/4 teaspoon salt

Preheat oven to 500

Cut potato roughly into 1/4" strips. Place in a medium bowl and toss with olive oil and pepper.

Place a baking sheet coated with nonstick spray in the preheated oven for 5-7 minutes to heat up. Place the potatoes in an even layer on the hot baking sheet and place back in the oven to bake for 25 minutes. After 10 minutes, carefully turn the potatoes over. As soon as they are golden, remove and toss them with the cheese, parsley and salt.
