Banana Blueberry Bread

Banana Blueberry Bread (Adapted from CL)

3/4 cup all-purpose flour
3/4 cup whole wheat pastry flour
3/4 cup dry quick-cooking grits
1/2 cup vanilla sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3 tablespoons canola oil
1 cup mashed ripe banana
2 large eggs, lightly beaten
1 teaspoon vanilla
3/4 cup frozen wild blueberries

Preheat oven to 350

In a large bowl, whisk together flours, grits, sugar, salt, baking powder and baking soda.

In a small bowl, whisk together canola oil, banana, eggs and vanilla until combined. Pour into the flour mixture and stir just until combined. Fold in blueberries.

Scoop batter into an 8 x 4" loaf pan lightly coated with nonstick spray. Bake until golden and a toothpick placed in the center comes out mostly clean - about 50-60 minutes. Remove from the oven and place on a wire rack to cool for 10 minutes. Carefully remove bread from pan and cool completely on wire rack.
