Banana-Carob "Pup"scotti

1 1/2 cups whole wheat flour
1/2 cup rye flour
1/2 cup oat flour
1/4 teaspoon baking soda
3 tablespoons chopped peanuts
3/4 cup mashed banana
2 tablespoons canola oil
1 large egg white
1 teaspoon vanilla
2 tablespoons to 1/4 cup carob chips, if desired

Preheat oven to 325

In a large bowl, whisk together flours, baking soda and peanuts.

In a medium bowl, whisk together banana, oil, egg white and vanilla. Pour into the dry ingredients and mix until combined - if the dough looks too dry, add water by the teaspoons until the dough comes together. If desired, sprinkle in 1/4 cup carob chips. Scoop the dough onto a lightly floured surface and knead just until it comes together - divide the dough in half.

If you want to just try out the carob, knead 2 tablespoons into one half.

Roll each piece of dough into a log about 10" long - transfer logs to a parchment lined baking sheet and flatten them until they are roughly 2 1/2" wide. Place into the oven and bake until the logs are firm to the touch, about 20 to 25 minutes. Remove and let rest on the baking sheet for 15 minutes. Slice the logs into 1/4" to 1/2" pieces and arrange them back onto the baking sheet - place into the oven and continue to bake for 10 to 25 minutes, depending on the thickness, until they are golden and just slightly soft in the center. Remove and transfer to a wire rack to cool completely.

Makes several dozen depending on thickness.
