Banana-Macadamia Nut Muffins

Banana-Macadamia Nut Muffins (Adapted from Bon Appétit)

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1/8 teaspoon fresh grated nutmeg
1 1/4 cups mashed ripe bananas
1/2 cup granulated sugar
1/4 cup packed dark brown sugar
8 tablespoons unsalted butter, melted
1/4 cup milk
1 large egg
1 teaspoon vanilla
1 cup unsalted macadamia nuts, toasted, chopped and divided

Preheat oven to 35o degrees.

In a large bowl, whisk together flour, baking soda, salt and nutmeg.

In a medium bowl, whisk together bananas, sugars, melted butter, milk, egg and vanilla. Pour into the dry ingredients and stir just until combined - fold in one-half cup nuts.

Evenly divide the batter between a 12 cup muffin tin lightly coated with nonstick spray. Scatter the remaining nuts on top. Place into the oven and bake until the tops spring back when lightly pressed in the center or a toothpick inserted into the center comes out mostly clean with a few moist crumbs attached, about 20 to 25 minutes. Remove from the oven and place pan on a wire rack for 5 minutes before carefully turning the muffins out to cool completely.

Makes 12 muffins.
