Basic French Toast

Basic French Toast

1/2 cup vanilla soy milk
2 large eggs
1 teaspoon granulated sugar
1/2 teaspoon vanilla
1/4 teaspoon cinnamon*
1/4 teaspoon cardamom*
4 to 6 slices firm or day-old bread
1 tablespoon butter

In a shallow dish, whisk together soy milk, eggs, sugar, vanilla, cinnamon and cardamom.

Melt butter in a large skillet over medium-high heat. While you wait, dip each slice of bread into the egg mixture. Place the dipped bread into the skillet and cook on each side until golden brown, about 2-3 minutes per side.

Makes 2 servings.

*Feel free to use the spices of your choice as these are only suggestions.
