Chewy Chocolate-Cherry Cookies

Chewy Chocolate-Cherry Cookies (Adapted from Cooking Light)

1 cup all-purpose flour
1/3 cup Dutch-process cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup granulated sugar
6 tablespoons unsalted butter, softened
1 teaspoon vanilla
1 large egg
2/3 cup dried tart cherries
1.5 ounces (about 1/4 cup) chopped bittersweet chocolate

Preheat oven to 350 degrees.

In a medium bowl, whisk together four, cocoa, baking powder, salt and baking soda.

In a large mixing bowl, beat together butter and sugar until combined. Beat in egg and vanilla. Add dry ingredients and mix just until combined. Fold in cherries and chocolate.

Drop dough using a tablespoon cookie scoop onto parchment-lined baking sheets. Place into the oven and bake until the centers are just set, about 10 to 12 minutes. Remove and let cookies cool for 5 minutes on the pans before transferring them to a wire rack to finish cooling.

Makes about 24 cookies.

  2. I made these for my coworkers last winter and they were fairly well-received. I didn't like them very much but everyone else seemed to! I think you have to really like cherries...
