Chicken and Ham Wild Rice Soup

Chicken and Ham Wild Rice Soup (Adapted from Land O Lakes)

3 tablespoons butter
2 medium carrots, shredded
1 cup 1/2" sliced celery
1/2 cup diced onion
1/4 cup all-purpose flour
4 cups half-and-half
1 cup chicken broth
1/4 cup sherry
3 1/2 cups cooked wild rice
2 cups cooked and shredded chicken
1 cup 1/2" cubed cooked ham
salt and fresh ground black pepper

In a large saucepan, melt butter over medium heat - add carrots, celery and onion. Cook until softened, about 4 to 6 minutes. Stir in flour - cook 1 minute, stirring. Whisk in half-and-half, broth and sherry. Stir in rice, chicken and ham - season to taste with salt and fresh ground black pepper. Cook, stirring occasionally, until thoroughly heated through, about 15 to 20 minutes.

Makes about 6 to 8 servings
