Chipotle-Spiced Shrimp

Chipotle-Spiced Shrimp (Adapted from CL)

3 tablespoons butter, divided
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon chipotle chile powder
16 ounces large shrimp, peeled and deveined
2 tablespoons dry vermouth
1 tablespoon fresh lime juice
1/4 teaspoon sugar
2 tablespoons chopped fresh cilantro

In a large skillet, add 1 1/2 tablespoons butter and melt over medium-high heat. Add garlic to pan and cook about 1 minute. Add salt, chile powder and shrimp to pan - cook for about 2 minutes. Mix in vermouth, juice and sugar. Continue cooking until shrimp are done, about 1 or 2 more minutes. Remove from heat and stir in remaining 1 1/2 tablespoon butters and cilantro.

I served this over some brown jasmine rice.
