Chocolate Chip-Cherry Bars

For the bars

10 ounce jar maraschino cherries
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
16 tablespoons butter, softened
1 cup confectioners' sugar
2 large eggs
1 teaspoon vanilla
12 ounces chopped bittersweet chocolate, divided

For the drizzle

1 cup confectioners' sugar
2 tablespoons butter, softened
2 to 3 tablespoons reserved cherry juice

To make the bars

Preheat oven to 325

Drain cherries and reserve juice for the drizzle. Finely chop the cherries, then pat dry with a paper towel to remove excess moisture.

In a medium bowl, whisk together flour, baking soda and salt.

In a large mixing bowl, beat together butter and confectioners' sugar until well combined. Add eggs, one at a time, beating until combined. Mix in vanilla. Add dry ingredients and mix just until combined. Stir in 6 ounces chopped chocolate and chopped cherries. Scoop the mixture into a 9" x 13" baking pan coated with nonstick spray - use an off-set spatula to evenly spread the mixture over the bottom.

Bake until the top is golden and a toothpick placed in the center comes out clean, about 25 to 35 minutes. Remove and immediately sprinkle with remaining 6 ounces of chopped chocolate - let stand 5 minutes, then spread chocolate evenly over the top. Set aside and allow to cool.

For the drizzle

In a small bowl, stir together confectioners' sugar, butter and enough cherry juice to make the mixture smooth and thin enough to drizzle. Drizzle the mixture over the chocolate.
