Chocolate Salami

Chocolate Salami (Adapted from Veg Times)

3 ounces bittersweet chocolate, finely chopped
4 ounces raw almonds
1/4 teaspoon cinnamon
4 ounces dried black mission figs
2 teaspoons vanilla sugar

In a double boiler, gently melt chocolate until smooth - remove from heat.

In a food processor, add almonds and cinnamon - pulse until coarsely chopped. Add figs and pulse mixture until finely chopped.

Add almond mixture to the melted chocolate and stir until combined - if it is too dry, add sprinkles of water until it sticks together.

Scoop mixture onto a piece of parchment paper and shape into a 1 3/4" diameter roll. Sprinkle all sides with vanilla sugar and wrap in wax paper. Place in the refrigerator until completely firm, at least 2 hours. Remove and cut evenly into 24 rounds to serve.

    Thank you for this recipe. I like everything with no flour or butter added.

    I have everything required for this recipe, but the figs. Can I substitute them with some prunes?

  2. Ilana - Hmm, it should work - I'm not sure if the prunes may end up being too sticky though. I would give it a try at least!
