Chocolate Sugar Cookies

Chocolate Sugar Cookies (Adapted from Martha Stewart)

1 1/2 cups all-purpose flour
1/2 cup Dutch-process cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
8 tablespoons (1/2 cup or 1 stick) unsalted butter, softened
1 1/2 cups granulated sugar
8 tablespoons (1/2 cup) shortening, melted and cooled
1 large egg
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon instant espresso powder

Preheat oven to 375 degrees.

In a medium bowl, whisk together flour, cocoa powder, baking powder and salt.

In a large mixing bowl, beat together butter and sugar until smooth and creamy. Add melted shortening and mix until combined.

In a small bowl, whisk together egg, vanilla and espresso powder. Pour into the butter mixture and mix until creamy. Add dry ingredients and mix just until combined.

Using a tablespoon cookie scoop, drop heaping mounds of dough (closer to two actual tablespoons) onto baking sheets lined with parchment paper. Place into the oven and bake until the edges of the cookies are firm, about 11 to 14 minutes. Remove and place sheets onto a wire rack to allow cookies to cool completely.

Makes about 18 large cookies.

  1. This sounds like a good Valentines' Day recipe. Think I'll make a batch this weekend & send them to my daughter in college. She should get them on Valentines' Day. Probably also be good with walnuts or white chips. Carol
