Chunky Blueberry Sauce

Chunky Blueberry Sauce (Adapted from Eating Well)

2 cups blueberries
1/4 cup honey
1 teaspoon freshly grated lemon zest
2 tablespoons lemon juice

In a medium saucepan, mix together blueberries, honey, lemon zest and juice. Bring to a boil, reduce heat and simmer for roughly 12-15 minutes - stirring occasionally. You are looking for the mixture to be pretty thick. Remove and let cool for 10 minutes - serve warm.

Served with Blueberry-Ricotta Pancakes
