Cinnamon-Apple French Toast

Cinnamon-Apple French Toast (Adapted from Veg Times)

For the topping

1 tablespoon butter
4 Granny Smith apples, sliced
3 tablespoons granulated sugar
1/2 teaspoon cinnamon
2 teaspoon lemon juice

For the French Toast

2 cups vanilla soy milk
1/2 cup apple butter
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon salt
12 hearty whole wheat bread slices

To make the topping

In a large skillet, melt butter over medium-high heat. Add apples and cook until they begin to soften - about 5 minutes. Reduce heat to medium. Mix in granulated sugar and cinnamon - continue to cook until tender - about 5-8 minutes depending on apple thickness. Add lemon juice and remove from the heat.

To make the French toast

In a shallow dish, whisk together soy milk, apple butter, vanilla, cinnamon and salt until well combined. Heat griddle to medium or medium-high and lightly coat with nonstick spray. Dip bread slices into the milk mixture and place on the griddle. Cook until lightly browned on each side - about 2 to 4 minutes per. Serve with the apple topping.

Makes 6 servings.
