Citrus Waffles with Marmalade Compote

Citrus Waffles with Marmalade Compote (Adapted from CL)

For the compote

1/4 cup orange marmalade
1 tablespoon fresh orange juice
1 teaspoon fresh lemon juice
1 teaspoon honey
2 cups fresh orange sections

For the batter

3/4 cup all-purpose flour
3/4 cup whole wheat pastry flour
1/2 cup packed brown sugar
1/4 cup toasted wheat germ
1 1/4 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon fresh grated nutmeg
1 1/3 cups buttermilk
1/3 cup water
2 tablespoons canola oil
1 teaspoon grated orange zest
1 large egg, lightly beaten

To make the compote

In a small saucepan, add marmalade, orange juice, lemon juice and honey - cook over medium-low heat just until the marmalade melts, about 2 minutes. Reduce heat and gently fold in the orange sections - keep warm.

To make the batter

In a large bowl, whisk together flours, brown sugar, wheat germ, baking powder, baking soda, salt and nutmeg.

In a small bowl, whisk together buttermilk, water, canola oil, orange zest and egg. Pour into the dry ingredients and stir just until combined.

Preheat waffle iron. Spoon about 1/3 cup batter per waffle onto the iron, quickly spreading the batter to the edges. Cook until steaming stops, about 3-5 minutes or so depending on your iron - repeat with remaining batter. Serve with the warmed compote.

Makes about 4 to 6 servings.
