Crisp Mashed Potato Cakes

Crisp Mashed Potato Cakes (Adapted from CL)

2 bacon slices
1/2 cup chopped green onions
2 cups chilled mashed potatoes
1 ounce shredded sharp white cheddar
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
3/4 cup panko breadcrumbs

Preheat oven to 425

Cook bacon in a medium skillet until crisp - remove and drain on paper towels, crumble when cool enough to handle. Remove all but 1 teaspoon of the drippings - over medium heat, add green onions. Cook until tender, about 2 minutes. Remove from the heat.

In a medium bowl, add potatoes - stir in onions, cheese, salt, pepper and crumbled bacon. evenly divide mixture into 6 portions - shape each into a 1/2" thick patty.

While you do the next part, place a baking sheet coated with olive oil spray to heat up - leave it in there for about 5 minutes.

Place panko in a shallow dish. Dredge patties in panko - carefully place each on the hot baking sheet. Place back in the oven and bake for 12 minutes - carefully turn patties over and continue to bake until golden, about 12 more minutes.
