Crunchy Pear and Celery Salad

Crunchy Pear and Celery Salad (Adapted from Eating Well)

4 celery stalks, trimmed and cut in half
2 tablespoons raspberry vinegar
2 tablespoons honey
1/4 teaspoon salt
2 ripe Bartlett pears, diced
4 ounces finely diced sharp white Cheddar cheese
1/2 cup chopped pecans, toasted
fresh ground pepper to taste

Fill a medium bowl with water and ice - add halved celery and let sit for 15 minutes to crisp up. Drain and dry with a paper towel. Cut into 1/2" chunks.

In a large bowl, whisk together vinegar, honey and salt. Gently toss in pears. Mix in the celery, cheese and pecans. Season with pepper to taste and gently stir to combine. Serve over a piece of romaine or butter lettuce.

Makes 4-6 servings.
