Dirty Rice

Dirty Rice (Adapted from CL)

4 cups chicken broth
2 bay leaves
2 cups dry brown jasmine rice
1 teaspoon olive oil
2 cups chopped onion
1 cup chopped celery
1 cup chopped roasted red bell peppers
2 tablespoons Cajun Spice Mix *See Below
12 ounces buffalo style chicken sausage, chopped
3 garlic cloves, minced
1/2 cup chopped fresh parsley

In a medium saucepan, bring broth and bay leaves to a boil. Add rice, reduce heat, cover and simmer for 35-45 minutes or until liquid is absorbed. Remove bay leaves and scoop rice into a large bowl.

In a large skillet, heat oil over medium-high. Stir in onion, celery, peppers, spice mix, sausage and garlic. Sauté 7-8 minutes, until thoroughly heated. Add sausage mixture and parsley to rice, tossing to combine.

Cajun Spice Mix

1 1/2 tablespoons paprika
1 tablespoon ground red pepper
1 tablespoon dried thyme
1 tablespoon dried oregano
1 tablespoon onion powder
1 tablespoon garlic powder
1/2 tablespoon kosher salt
1/2 tablespoon black pepper
1/2 tablespoon sugar

In a small bowl, whisk together all ingredients until combined.

Makes about 1/2 cup
