Farfalle with Feta and Chipotle

Farfalle with Feta and Chipotle (Adapted from Veg Times)

10 ounces dry farfalle
2 garlic cloves, minced
1/4 teaspoon chipotle powder
1/4 teaspoon salt
1 cup fresh cilantro, chopped
3 tablespoons fresh lime juice
2 tablespoons olive oil
1 teaspoon lime zest
2 ounces crumbled feta cheese
3 tablespoons pepitas, toasted

In a large pot of boiling salt water, cook pasta according to package directions - drain well.

Meanwhile, in a medium bowl, mix together garlic, chipotle powder, salt, chopped cilantro, lime juice, oil and zest until well combined. Fold in the cheese.

Add hot pasta to a large bowl and pour the cilantro dressing on top - toss well to combine. Season with salt and pepper to taste if necessary. Scatter with toasted pumpkin seeds before serving.

Makes about 4 servings.
