Hearty Quinoa with Sautéed Apples and AlmondsHearty Quinoa with Sautéed Apples and Almonds (Adapted from CL)

1 cup dry quinoa, well rinsed and drained
2 teaspoons olive oil, divided
3/4 cup chopped onion
3/4 cup finely diced carrot
1 garlic clove, minced
2 cups vegetable broth
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1 1/2 cups finely diced Granny Smith apple
3 tablespoons slivered almonds, toasted
1/8 teaspoon freshly ground black pepper

In a medium saucepan, heat 1 teaspoon oil over medium-high. Stir in onion, carrot and garlic - sauté until the onion is tender and the carrots begin to brown, about 5 minutes. Pour in the broth, quinoa, salt and cinnamon. Bring to a boil, cover, reduce heat and simmer until the liquid is absorbed, about 20 minutes. Remove from heat and fluff with a fork - cover to keep warm.

In a large skillet, heat remaining 1 teaspoon oil over medium-high heat. Add apples - sauté until the apple begins to brown, about 7 minutes. Add apple, almonds, and pepper to quinoa mixture and gently toss to combine.

Makes about 3 to 4 servings.
