Lime Sugar Cookies

Lime Sugar Cookies (Adapted from Kellogg's)

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
8 tablespoons unsalted butter, softened
1 cup granulated sugar
2 teaspoons fresh grated lime zest
1 large egg
2 tablespoons milk
1 teaspoon vanilla
2 to 2 1/2 cups crispy rice cereal

Preheat oven to 375 degrees.

In a medium bowl, whisk together flour, baking powder and salt.

In a large mixing bowl, beat together butter, sugar and lime zest until creamy and combined. Beat in egg, scraping down the sides as needed. Mix in milk and vanilla. Add dry ingredients and mix just until combined.

Place cereal in a wide, shallow dish.

Using a tablespoon cookie scoop, portion out the dough into balls and roll each in the crispy rice cereal. Place cookies onto baking sheets, roughly 2" apart - flatten slightly.

Place into the oven and bake until the edges are lightly browned, about 13 to 15 minutes. Remove and let cookies cool for 2 minutes on the baking sheets before transferring them to a wire rack to cool completely.

Makes about 30 cookies.

  1. I can't wait to try these. FYI... These are obviously lime cookies, and the ingredients use lime zest, but your directions say to put in the lemon zest.
