Moroccan Pita Sandwiches

Moroccan Pita Sandwiches

For the patties

12 ounces ground sirloin
1/3 cup finely chopped onion
2 tablespoons tomato paste
1 large egg
3/4 teaspoon ground coriander
1/2 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon fennel seeds, crushed
1/4 teaspoon cinnamon
1/8 teaspoon ground ginger
1 tablespoon canola oil

For the sauce

1 cup Greek yogurt
1 tablespoon tahini
1 teaspoon fresh lemon juice
1/2 teaspoon fresh grated lemon zest
1 garlic clove, minced
salt

Assembly ingredients

4 6" pitas, halved
lettuce leaves
16 thin tomato slices

To prepare the patties

Preheat oven to 400 degrees.

In a medium bowl, add beef, onion, tomato paste, egg, coriander, salt, cumin, fennel, cinnamon and ginger. Evenly divide the mixture into 8 pieces, shaping each into a 1/4" thick patty.

In a large skillet, heat oil over medium-high. Place the patties into the pan - heat until both sides have browned, turning occasionally, about 4 minutes. Place patties onto a baking sheet coated with cooking spray - place pan into the oven and bake until cooked through, about 5 minutes.

To prepare the sauce and assembly

Meanwhile, in a medium bowl, whisk together yogurt, tahini, lemon juice, zest, garlic and salt. Spoon about 2 tablespoons sauce into each pita half. Add 1 lettuce leaf, 2 tomato slices and 1 patty into each to serve.

Makes 4 servings.
