Pacific Rim Wraps with Creamy Citrus Ginger Dressing

Pacific Rim Wraps with Creamy Citrus Ginger Dressing (Adapted from Nestle)

For the dressing

2/3 cup evaporated milk
5 tablespoons fresh lemon juice
1/4 cup canola oil
3 tablespoons granulated sugar
2 teaspoons ground ginger
1 teaspoon salt
1/4 teaspoon fresh ground black pepper

For the wraps

4 cups shredded romaine lettuce
3 cups shredded cooked chicken breast
1 cup matchstick-cut carrots
1 cup fresh sugar snap peas, halved
1/2 cup dried cranberries
1/4 cup toasted slivered almonds
6 8" flour tortillas

To prepare the dressing

In a small resealable container, add milk, lemon juice, oil, sugar, ginger, salt and pepper. Cover container with lid and shake until well blended. This will make slightly more than you need, but will keep in the refrigerator for a couple days.

To prepare the wraps

In a large bowl, toss together romaine, chicken, carrots, sugar snap peas, dried cranberries and almonds. Drizzle over about 2/3 cup of the dressing and toss well to coat.

Evenly divide the mixture between the tortillas and roll each up. Cut in half on an angle to serve.

Makes 6 servings.

  1. That sounds yummy! Although I'd leave the chicken out because I'm vegetarian. The flavor combination if very interesting.
