Peanutty Snickerdoodle Bars

Peanutty Snickerdoodle Bars (Adapted from Land O Lakes)

1 1/2 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/2 teaspoon salt
8 tablespoons unsalted butter, softened
3/4 granulated sugar
1 large egg
1/2 cup chopped peanuts
1 tablespoon coarse sugar
1/2 teaspoon cinnamon
coarse colored sugar, if desired

Preheat oven to 350

In a medium bowl, whisk together flour, cream of tartar, baking soda and salt.

In a large mixing bowl, cream together butter and sugar until well combined and creamy. Add egg and mix until blended. Add dry ingredients and mix just until combined. Scoop the dough into the bottom of a 9" x 13" baking pan coated with nonstick spray. Press the dough to an even layer across the bottom.

In a medium bowl, toss together peanuts, 1 tablespoon coarse sugar and cinnamon. Scatter the mixture over the cookie dough and press lightly to adhere. Bake until golden and a toothpick placed in the center comes out mostly clean, about 14 to 18 minutes. Remove and sprinkle the top with a bit of colored coarse sugar if desired - place on a wire rack and let cool completely before cutting into bars.

  1. Hi Joe! I have been reading your blog for the last few months and wanted to tell you how much I have enjoyed reading it each day! I made the peanutty snickerdoodle bars today. They were outstanding! I made a few adjustments for the altitude (we live in Denver) such as increasing the flour, reducing the sugar and substituting brown sugar for some of the granulated sugar. They turned out great!

    Thank you for the recipe...we will definitely be using it again!!
