Sesame Noodles with Broccoli

Sesame Noodles with Broccoli (Adapted from CL)

For the sauce

2 tablespoons tahini
2 tablespoons water
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
1 1/2 tablespoons dark sesame oil
2 teaspoons honey
1/2 teaspoon salt
3/4 teaspoon fresh grated ginger
1 teaspoon chile paste with garlic
2 garlic cloves, minced

For the noodles

8 ounces dry whole wheat spaghetti
5 cups broccoli florets
2 cups matchstick-cut carrots
3/4 cup thinly sliced green onions
1/3 cup chopped fresh cilantro
3 tablespoons sesame seeds, toasted
1/4 teaspoon salt

To make the sauce

In a small bowl, whisk together tahini, water, vinegar, soy sauce, oil, honey, salt, ginger, chile paste and garlic.

To make the noodles

In a large pot of boiling salted water, add pasta and cook for 6 minutes. Stir in broccoli and cook for 1 minute. Add carrots and continue to cook for 1 minute. Drain well and place in a large bowl. Add the onions, cilantro, sesame seeds and salt - drizzle with sauce and toss well to evenly coat the noodles.

Makes 4 servings.
