Snow Peas with Toasted Almonds

Snow Peas with Toasted Almonds (Adapted from Bon Appétit)

1 tablespoon unsalted butter
1/4 cup sliced almonds
8 ounces trimmed snow peas
2 teaspoons minced shallot
1 teaspoon fresh lemon juice
salt

In a medium skillet, melt butter over medium. Stir in almonds - cook, stirring often, until the almonds are toasted and the butter begins to brown, about 1 to 3 minutes. Stir in snow peas and shallot - cook until the peas are crisp-tender, about 1 1/2 minutes. Remove from the heat and stir in lemon juice - season with salt to serve.

Makes about 4 servings.

  2. I know this is an older entry, but just wanted to let you know I made this tonight and it was great! I bought snow peas for the first time tonight without a clue what I wanted to do with them. A quick search brought me here and this was a perfect way to showcase the crispy snow peas. Thank you!
