Spicy Apricot-Glazed Chicken

Spicy Apricot-Glazed Chicken (Adapted from Everyday Food)

1/4 cup apricot jam
1/4 teaspoon crushed red pepper
4 boneless, skinless chicken breast halves
salt and fresh ground black pepper

Preheat broiler with rack in the upper third of the oven.

In a small bowl, stir together apricot jam and crushed red pepper.

Line a baking sheet with foil and lightly coat with cooking spray. Season both sides of the chicken with salt and pepper - arrange on top of the baking sheet in a single layer. Place under the broiler and cook just until chicken begins to turn opaque, about 5 to 6 minutes.

Carefully remove the baking sheet from the oven and evenly brush the apricot glaze onto the chicken - place back into the oven and broil until glaze is lightly browned and an instant read thermometer reads 165 degrees, roughly 3 to 6 minutes more.

Makes 4 servings.

  1. Not much of a recipe? This is utter perfection for busy days. We love apricot glaze - pantry without apricot jam is incomplete.
    Can't wait to try it - have all ingredients on hand.
