Spicy Sloppy Joes

Spicy Sloppy Joes (Adapted from Vegetarian Times)

3 tablespoons canola oil
4 garlic cloves, minced
1/2 cup roasted red bell peppers, chopped
24 ounces soy crumbles
3 tablespoons chili powder
2 jalapeƱos, seeded and minced
1 1/4 cups amber ale
3/4 cup chili sauce
2 tablespoons soy sauce
1 cup finely chopped green onions
salt and pepper to taste

In a large saucepan, heat oil over medium-high. Add garlic and bell pepper - cook 1-2 minutes.

Mix in soy crumbles and chili powder - cook until fragrant, about 2 minutes.

Stir in jalapeƱos, ale, chili sauce and soy sauce. Reduce heat a simmer and cook until the mixture begins to thicken, about 15 minutes.

Stir in green onions and season with salt and pepper to taste.

Makes 4-6 servings.
