Strawberry, Pistachio and Goat Cheese Pizza

Strawberry, Pistachio and Goat Cheese Pizza (Adapted from CL)

cornmeal, for dusting
12 ounces prepared whole-wheat pizza dough (I used our favorite recipe)
salt
3 ounces crumbled goat cheese
1 cup sliced strawberries
1 cup baby spinach
1 teaspoon extra-virgin olive oil
1/2 teaspoon fresh lemon juice
fresh ground black pepper
1 ounce shaved Asiago cheese
1/4 cup chopped pistachios, toasted

Preheat oven to 450 degrees with a pizza stone placed on the lowest rack.

Sprinkle enough cornmeal to lightly cover a pizza peel. Stretch and roll out dough to a rough 12" to 13" circle and transfer to the cornmeal-dusted peel. Drizzle dough with oil and rub over the top of the dough - season lightly with salt. Prick top of dough all over with a fork to prevent bubbles. Slide the crust onto the stone and cook until the dough is golden and crisp, about 10 to 14 minutes. Carefully remove from the oven and place the crust onto a wire rack. Scatter goat cheese all over the top of the crust

In a medium bowl, gently toss together strawberries, spinach, olive oil and juice - season with salt and black pepper. Arrange mixture evenly over goat cheese and scatter the top with the shaved cheese and chopped pistachios.

Makes about 4 servings.
