Turkey Potato Patties

Turkey Potato Patties (Adapted from Canadian Living)

1 large egg
1 1/2 cups diced cooked turkey
1 cup mashed potatoes
1/4 cup dried breadcrumbs
2 tablespoons chopped fresh parsley
2 tablespoons finely chopped green onion
2 teaspoons Dijon mustard
1/4 teaspoon dried sage
1/4 teaspoon dried thyme
salt and fresh ground black pepper
1 to 2 tablespoons canola oil

In a medium bowl, beat egg to combine. Stir in diced turkey, potatoes, breadcrumbs, parsley, green onion, mustard, thyme and sage - season with salt and pepper. Divide mixture into 8 portions and shape each into a 1/2" thick patty. Cover and place into the refrigerator for at least 30 minutes (or up to 8 hours).

In a large skillet, heat oil over medium. Carefully slide patties into the pan and cook, turning once, until browned on each side and thoroughly heated through, about 6 to 10 minutes total. If the skillet is too dry after cooking one side, add another tablespoon of oil as you flip them.

Makes about 4 servings.

  3. Wow, those look great! I didn't get any leftovers this year, but that makes me want to roast up another bird just to give em a try. I bet you could throw some stuffing in there, too!
