Turkey Sloppy Joes

Turkey Sloppy JoesTurkey Sloppy Joes (Adapted from Everyday Food)

1 tablespoon olive oil
2 cups coarsely grated carrots
3/4 cup finely chopped onion
1 garlic clove, minced
salt and fresh ground black pepper
3 tablespoons tomato paste
12 ounces ground turkey
28 ounce can fire-roasted crushed tomatoes
2 tablespoons dark-brown sugar
1 tablespoon cider vinegar
1 teaspoon Worcestershire sauce
4 hamburger buns

In a large saucepan, heat oil over medium - add carrots, onion, and garlic. Season with a sprinkle of salt and pepper. Cook until they vegetables have softened, about 4 to 5 minutes.

Stir in tomato paste - cook, stirring constantly, for 1 minute. Add turkey - continue to cook, breaking up meat with a wooden spoon, until no longer pink, about 5 more minutes. Pour in tomatoes, sugar, vinegar and Worcestershire sauce. Cook, stirring occasionally, until slightly thickened, about 12 to 14 minutes. Serve the meat mixture on the hamburger buns.
