Wheat Berry Waldorf Salad

Wheat Berry Waldorf Salad (Adapted from Gourmet)

4 cups water
3/4 teaspoon salt
1 cup dry wheat berries
1 Gala apple, cored and cut into 1/2" chunks
1 Granny Smith apple, cored and cut into 1/2" chunks
1 celery rib, thinly sliced
2/3 cup packed fresh mint leaves, chopped
1/2 cup dried sour cherries
1/4 cup golden raisins
1/4 cup walnuts, toasted and chopped
2 green onions, thinly sliced
3 tablespoons seasoned rice vinegar
3 tablespoons fresh orange juice
3/4 teaspoon fresh grated orange zest
salt and fresh ground black pepper
Boston lettuce leaves

In a saucepan, bring water and salt to a boil. Stir in wheat berries - cover, reduce heat and simmer until tender, about 1 hour and 15 minutes. Drain water away and let the cooked wheat berries cool to room temperature.

In a large bowl, add cooked wheat berries, apples, celery, mint, cherries, raisins, walnuts and green onions - toss well to combine. Add vinegar, orange juice and zest, tossing to coat. Season to taste with salt and pepper - serve salad over the lettuce leaves.

Makes about 4 servings.
