Whole Wheat Pasta Salad with Walnuts and Feta Cheese

Whole Wheat Pasta Salad with Walnuts and Feta Cheese (Adapted from Ellie Krieger)

8 ounces dry whole wheat rotini pasta
2 tablespoons walnut oil
2 tablespoons red wine vinegar
1 garlic clove, minced
1/2 teaspoon Dijon mustard
1/2 cup coarsely chopped walnuts, toasted
1/2 cup crumbled feta cheese
1/3 cup diced red onion
1 1/2 cups chopped baby spinach leaves
salt and fresh ground pepper to taste

In a large pot of boiling salted water, cook pasta according to the directions on the package. Drain and rinse under cold water - place pasta in a large bowl and set in the refrigerator to chill.

In a small bowl, whisk together oil, vinegar, garlic and mustard.

Remove the pasta from the refrigerator and toss with the walnuts, feta, onions and spinach. Drizzle the dressing over the pasta and gently toss to combine. Season to taste with salt and pepper.

Makes about 4 servings.
