Cherry Peanut Butter Oat Cookies

1 cup sugar
3/4 cup butter, softened
1/2 cup packed brown sugar
1/2 cup peanut butter
2 eggs
1 teaspoon vanilla
2 cups rolled oats
1 cup all-purpose flour
1/4 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon baking soda
5 ounces dried tart cherries, coarsely chopped

Preheat oven to 375

In a large mixing bowl, cream together sugars, butter, and peanut butter until light and fluffy. Add eggs, one at a time, and then vanilla. Mix until combined.

In a medium bowl, whisk together oats, flours, baking powder and soda. Add to the butter mixture and beat until mixed. Fold in cherries.

Using a tablespoon cookie scoop, place dough onto parchment lined baking sheets. Bake for 9 to 11 minutes or until edges are light golden brown. Let sit on baking sheet for 1-2 minutes and then move to a wire rack to cool completely.

  1. I never would have thought to pair peanut butter with cherry--and the inclusion of whole wheat adds another dimension to it... although it kind of makes me want to sub that with millet flour, because I think it would complement the peanut butter and cherries in an interesting way.
