Fruit studded Muffins with Almond Streusel

1 cup all-purpose flour
3/4 cup whole wheat pastry flour
3/4 cup ground flaxseed
3/4 cup packed brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup milk
1/2 cup orange juice
1 tablespoon butter, melted
1 teaspoon vanilla extract
2 large eggs, lightly beaten
2 cups finely chopped apples, I used Granny Smith
1/2 cup golden raisins

Topping

1/4 cup finely chopped almonds
2 tablespoons brown sugar
1 tablespoon chilled butter, cut into small pieces

Preheat oven to 350

In a large bowl, whisk together flours, flaxseed, brown sugar, baking powder, baking soda and salt.

In a medium bowl, whisk to combine milk, orange juice, melted butter, vanilla, and eggs. Pour into flour mixture, stirring just until combined. Gently fold in apple and raisins. Evenly distribute between 14 muffin cups that have been lightly coated with cooking spray.

Topping

In a small bowl, combine walnuts, 2 tablespoons brown sugar, and chilled butter. Mix with a fork until crumbly. Sprinkle streusel evenly over each muffin tin. Bake 18-22 minutes or until muffins spring back when touched lightly in center. Carefully remove from the muffin pan immediately and set on a wire rack to cool.
