Golden Smashed Potatoes

Golden Smashed Potatoes(Adapted from CL)

2 1/2 pounds Yukon gold potatoes, quartered
1 tablespoon olive oil
1 teaspoon mustard seeds
1 cup milk
2 tablespoons maple syrup
1/2 teaspoon ground turmeric
1 teaspoon salt
1/2 teaspoon freshly ground black pepper

Place potatoes in a large saucepan; cover with water. Bring to a boil; reduce heat, and simmer 15 minutes or until tender.

While potatoes cook, heat oil in a small saucepan over medium heat. Add mustard seeds; cook 2 minutes or until seeds begin to pop. Add milk, syrup, and turmeric; simmer until reduced to 1/2 cup (about 10 minutes).

When the potatoes are done, drain and return potatoes to the pan. Slowly add the warm milk mixture and smash with a fork. If not serving right away, keep warm over a double boiler.
