Peanut Butter Crunch Cookie Dough

Peanut Butter Crunch Cookie Dough(Adapted from One Smart Cookie)

1/4 cup peanut butter
2 tablespoons butter, softened
1/3 cup sugar
1/2 cup packed brown sugar
2 large egg whites
1 teaspoon vanilla extract
1 1/3 cup flour
1/4 teaspoon baking soda
1/4 teaspoon salt
About 1/2 cup peanut butter crushed granola bars (such as Nature Valley) *orginial called for peanut brittle but I had none.

Beat peanut butter, butter, and sugars in a medium bowl until creamy. Add egg whites and vanilla and beat until smooth.

In a small bowl, whisk flour, baking soda, salt and crushed granola. Stir the flour into the peanut butter mixture by hand, just until the dough is combined and soft.

If making the ribbon cookies, use the dough from this point.

For just making cookies, shape the dough into an 8" long log and then wrap in plastic wrap. Freeze for at least 3 hours.

To bake - Preheat oven to 350. Slice log into 1/4" slices and place on a parchment lined baking sheet. Bake for 10-12 minutes, until the edges are a pale golden color. Remove cookies to a wire rack and cool completely.
