Roasted Cauliflower with Brown Butter

Roasted Cauliflower with Brown Butter (Adapted from CL)

6 cups cauliflower florets
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter

Preheat oven to 400

Coat a large baking sheet with cooking spray - scatter cauliflower in a single layer on the sheet and lightly coat with cooking spray. Season cauliflower with salt and pepper. Bake until beginning to brown and the cauliflower is tender, turning twice - about 25 minutes.

In a small skillet, melt butter over medium heat - let cook until you can smell a nutty aroma and the mixture begins to lightly brown, about 3 minutes.

When the cauliflower is done, gently toss it with the browned butter in a medium bowl to coat.

Makes about 3-4 servings.
